Can I freeze a ganash covered cake?
Hi Everyone,
I’m getting married in just over 4 weeks and as I make cakes, everyone is expecting me to make an amazing cake for my own wedding!! I have a design that includes a lot of flowers, which I have already started making and the bottom tier is a dummy so will be quite decorated, (again done ahead of time) the real cake tiers will be plain enough, with just the pre-made flowers cascading around it!
I am thinking of making the sponge cake tiers the week before and freezing them, so there wont be too much to do the week of the wedding except cover and stack them. I am just wondering if I can fill and cover them with ganash before freezing them or is it safer just to cook and freeze them when cool?
Any advice would really be helpful, as I’m sure the week of the wedding will be busy enough!

Ganached cakes can frozen. Just make sure you wrap the cakes very well to prevent freezer burn and have them in cake boxs for protection. An answer here might help http://www.cakeflix.com/questions/freezing-a-ganached-cake
