carousel cake – problem with column and roof

I recently made the beautiful carousel cake and was delighted with the results. I royal iced the column/roof to the cake and dowelled it sufficiently. However, en route to the destination the column became unsteady. Do you have any tips as to how I can prevent this from happening again? Many thanks

Hi GalaxyGirl

I haven’t made this cake yet but I think it would be essential to use a fair amount of royal icing to secure the centre column and left to dry before assembling the upper tier. Paul does say in the tutorial that it is crucial to have the top tier perfectly centred before attaching the roof. Perhaps the royal icing may not have dried sufficiently causing slight movement in the column or it may be possible the top tier moved from it’s central position to cause the instability. I’m sorry I can’t help with a more positive answer and hope other members will contribute their opinion.

I sharpened either end of a wooden dowel and stuck it through the roof, middle column and cake. Kept the cake in place perfectly.
