carrot cake wedding cake

Hello everyone,

I have been asked to make a carrot cake for my best friends wedding cake and am after some advice. Am I still ok to make cream cheese icing for it the day before or even 2? and will this need refridgeration after the cake is iced? Also would people recommend fondant icing instead? or even as well as? I have read that doing both can cause the fondant to disintegrate somewhat. Any advice would be very welcome or recommendations on recipes. My friend is gluten free just to complicate matters!

It depends how long the cream cheese is out of the fridge it goes soft.I would fill it with cream cheese frosting.use jam to coat cake and then use fondant and put in a cool place not the fridge.if you ice with cream cheese frosting you need to refrigerate and any flowers need to be put on when you take it out.if you use fondant you van decorate then keep cool.no more than 2 days
