Hi Sammy

If you put in the search box ‘choc recipe’ scroll down to the bottom of the page and click on 4 it will take to an 8″ recipe for Paul’s moist chocolate cake, then if you search again ‘chocolate cupcakes’ there are a couple of answers there for temperature and timing. Here is another recipe you might like to try:

Chocolate and Ginger Cupcake (you can leave out the stem ginger if want) Makes 12 cupcakes

80 gm dark chocolate chopped
100 unsalted butter at room temperature
100 gm caster sugar
115 gm self raising flour
2 tablespoons cocoa powder
2 medium eggs
3 balls of stem ginger chopped

To make Pre heat oven 180c / 160c fan Gas 4

1. Melt chocolate in a heat proof bowl over gently simmering water, don’t allow bowl to touch water. When
melted set aside for approx 5 mins.
2. Beat butter and sugar until light and fluffy, then beat in the eggs one at a time. Stir in the melted chocolate.
3. Sift in the flour and coco powder add chopped ginger if using, fold in gently until combined.
4. Spoon mixture into paper cakes and bake for approx 18 mins or until a cocktail stick inserted into the middle comes out clean. Transfer to wire rack immediately and cool completely before decorating as you want.

Hope this helps.
