Chocolate flavoured sugar paste
is it possible to use chocolate flavoured sugar paste to make the chocolate wrap cake?

I think that sugar paste would be too soft without the addition of CMC or Tylo to harden it off.
Hi julie-thomas11
Using chocolate flavoured fondant would just not be the same as using modelling chocolate for the wrap cake. As Sallymac rightly says firstly it would be too soft to hold up but even if you added tylose there is no real guarantee that so much gum paste would dry and hold. It would also be very heavy and not very nice to eat.
I know modelling chocolate is expensive but you can easily make your own at little expense. There are lots of recipes online, they’re all pretty much the same. The only thing I would say is not to use the candy melts as they do taste awful. I use supermarket brand dark chocolate from Asda and the cheapest white chocolate from Lidle, both work as well as the candy melts but taste nicer. You’ll find a recipe here http://www.cakeflix.com/questions/modelling-chocolate-for-chocolate-wrap-cake
Hope this helps.
Thank you both for your advice, I thought that would be the case with sugarpaste! I will use the modelling chocolate, I made a small quantity to make some chocolate roses and they turned out well, just need to make a larger quantity now fr the wrap.
You may be better off making smaller quantities rather than one big batch, easier to handle. Good luck with it.
