Chocolate Ganache – how long does it keep?
If chocolate ganache has so much double cream how long will it last in the fridge?

I think ganache is only as fresh as the use by date of the cream. Obviously sugar in the chocolate will act as a preservative, but I wouldn’t use fridge leftovers after a month. I usually taste it, you’ll know straight away if it has turned. You can freeze ganache for months, it defrosts well and still tastes great. Hope this helps.
