chocolate mud cake question for MIWL

Hi there MIWL, I fancy having a go at the mud cake but just wanted to know if it would be ok for carving

Hi Michelle

I’ve had no problems stacking or carving the mud cake. I made teddy, golfing cake, and the handbag, there was something else which I can’t remember and it was no problems. Hope you try it. x

That’s good news as I’ve just baked it and it looks perfect. I Had to make a 10×8 and ran out of golden caster sugar so ended up using half caster and half soft brown sugar. Very pleased with result, just need to level it ever so slightly. Thanks again and thanks for posting the recipe x

I got the wrong end of the stick, I thought you meant Paul’s moist chocolate recipe! The mud cake is fine for carving and stacking, it’s used for wedding cakes in Oz. Have a quick read of that blog and you’ll see that it was donated to the site by headrabbit. Feed back would be great! x

You can scale the recipe up here http://www.cakeflix.com/blog/how-to-work-out-what-size-cake-tin-to-use. If you’re not too confident using the ready reckoner the cakeOmetre might suit you better as it works all the maths out for you. Hope this helps, enjoy the recipe and many thanks for your comments. Thank you madeitwithlove. That’s great and really easy to do. I was hoping to make the cake today, but the shop ran out of buttermilk! Hey ho, will give it a go in on Thursday. Hubby’s birthday on Friday, so running out of time. I’ll leave feedback in the blog to let you know how it went. Mx

Buttermilk is easy to make at home, just add 1 tablespoon of lemon juice to 200ml of full fat cow’s milk, let it sit for 15 minutes, it will curdle, and you have buttermilk. Use in you recipe. I warm the milk for about 30 seconds in the microwave before adding the lemon juice. x
