Chocolate Shard cake

Has anyone attempted this cake yet? I’m trying to see how practical it is for transportation, as I’m making it for a wedding in Kent. It’ll be my first wedding cake! The cakes should always be assembled at the venue right? Is there any chance I could transport it stacked somehow? Has anyone done that before?
the problem with this one is that I’d need to do all the decorating (shards/roses) on site, rather than finishing it all beforehand and then simply stacking the cakes at the venue. I’m a little concerned about this as I’d like to finish as much as possible in advance just to ensure there are no snags. Any tips or ideas on how to transport? The other thing is the wedding will be mid-summer (July), I’m a little concerned about the chocolate slabs melting or looking droopy, if it’s left out for a day. Would appreciate any tips or advice on this cake!

I live in australia and heat is always a problem.I always keep the cake with shards on in the fridge before delivering.make sure the shards are a good thickness I use shard moulds.if they are too thin they will collapse if it, too warm.if you can transport in a polystyrene box lined with a bag of ice this works.ask your local fish supplier they have wide boxes.

Hi Faye28

The safest way would be to transport with out the decorations and set up at the venue. The shards and all the flowers can be made well ahead of requirement and can be stored in a double lined cake box to keep as cool as possible. The shards should be fine as long as the chocolate has been properly tempered. You can also try a box like this http://www.carinascupcakes.co.uk/product_p/twb14.htm. The picture shown is for a 3 tier cake, they may well stock for more tiers. This would be a very heavy and somewhat precarious way of transporting so perhaps it may be better to transport in two separate boxes. You’d need to take made up ganache and have a means of heat to bring it to spreadable consistency. Asking ahead for heating facility would ensure peace of mind.
