Chocolate sponge consistency
Hi, I have made Pauls chocolate cake quite a few times and although it is delicious I can’t seem to get the right consistency. My sponge is almost brownie like and would be squidgy which makes it hard to carve. Does anyone know what I’m doing wrong?

I sometimes reduce the sugar content by 100 grams to make it less brownie like

Hi breene
I don’t think you’re doing anything wrong. This is a very moist recipe which carves better either when partially frozen or chilled.
