Chocolate Wrap Cake – on dummy cakes

Hi I am planning to make a White Chocolate wrap cake for a wedding but will be on dummy cakes.
Would it be OK to decorate cake on dummy cakes the week before wedding & store it in fridge until day of wedding as it is a family wedding & we will be really busy the week of the wedding????

I think that would depend on what sort of cake you’re baking. Most sponge cakes have a recommended shelf life of 5 days so you’d be taking a chance with the freshness of the cake which will start to become stale and probably dry from being in the fridge. Madeira cake has shelf life of 2 weeks and there is a long shelf life mud cake recipe here http://www.cakeflix.com/blog/how-to-make-chocolate-mud-cake Is it possible please for a little more information on what sort of cakes you intend using, whether you are using ganache as crumb coating and filling?

If its on dummy cakes it may be ok but choc can sweat after being in the fridge

Hi, thanks for the replies. Cakes will be dummies so no sponge involved. Its more the chocolate wrap I’m concerned about, what is best way to store it or is it safer making it closer to big day but again am I best to leave it at room temp or in fridge or cold room – thanks in advance

I would suggest leaving in a cold room and doing it the week before should be fine

Seems I got the wrong end of the stick! Modelling chocolate doesn’t have to be refrigerated so you can decorate your ‘cakes’ when ever you like. Once done lightly cover with cling film or just something to keep the dust off and store in a cool room away from any heat sources like direct sunlight. The dummies will last for a very long time as displays. Good luck with the wedding. x
