Cigarillo wedding cake

Hello,
Just looking for a bit of advice. I’ve been asked to make a choc cigarillo wedding cake for a friend’s wedding with each layer being different type of choc – dark, ,milk, white. I’m just a hobby baker but have made quite a few cakes with ganache so mostly happy with that bit. , although a bit scared about the white choc ganache!
I had planned on doing a 12, 10 and 8 inch cake but on further investigation I’m not sure that will give me enough room to tuck some fruit, prob rasps /blueberrys/blackberries etc around the layer circumference. Anyone got experience of this type of cake?

Hi lorna

You should have enough room. If you have the cigarillos slightly taller than each tier there will be a cavity which will support draping fruits. The bottom tier will have the covered board showing but you can arrange the fruit on that. Have a look at http://www.cakeflix.com/online-cake-decorating-courses/white-chocolate-shard
The cigarillos don’t have to go up as tall as the shards in the tutorial, just enough to make a gap. If you’ve got some dummy cakes place some dowels against them just to see what I mean. I hope you get what I’m saying. Oh and will you be covering with fondant or only ganaching? It’s easier to stick cigs on ganache.

Thanks miwl, I’m just using ganache. I don’t have cake dummies but I’ll just use my cake tins and see what sort of gap I have. Good idea thanks 🙂
