Is it alright to use 34 coco solid in ganacge
You’d have to use more chocolate to cream if using for crumbcoat because it won’t set very well, it just has too much sugar and other stuff like oil in it to have a good taste. You can use it as filling ganache, lots of people do but really you should try and aim for a minimum of 50% for dark, 40% milk and 27% for white.

There are all different makes. If you search in google ‘chocolate containg 40% cocoa solids’ you’ll get a better idea of what’s out there. You could use two different percentages to get the blend you want. Bars of chcolate come in different percentages, I think Green and Blacks do a reasonable range.
