I have been asked to make a coconut sponge cake – does anyone have a good recipe that tastes good but is strong enough to be carved without being coarse??
I usually use the same sponge recipe as i would for vanilla, which is a basic ‘all in the one bowl’ style recipe, not complicated at all. But i substitute a third of the oil for some coconut milk then add a few teaspoons of coconut extract which i got from my local health food store, and the local deli also sells it.
Just found this lovely coconut cream recipe and thought of you! might be firm enough for carving. x
