Coloured sponge

Can you tell me how to colour my sponge pink? Do I just add the colour gel directly into the sponge mixture?

Hi Tomandhen123

I usually add the colour to the sugar and butter whilst beating. This way, you will be able to see how pink the mix is. You may need quite a bit to get it to the colour you want because the yellow in the butter will make the pink appear a little orange. Add enough pink or red to get your desired colour as sometimes the colour diminishes during baking.

If you prefer to have a natural ingredient, use frozen raspberries which are reduced to half their weight by boiling. Add a tablespoon or two of sugar to take away the tartness if the sponge requires it. Once reduced, put the raspberry mixture through a fine mesh sieve or a Chinois to extract the pulp, which can then be added to the cake batter and baked. I prefer this method because it does give a lovely colour and the shelf life of the cake is not affected because the water in the raspberries is boiled off, making its pulp stable enough to last four to five days.

You can also use a good raspberry jam. Hope this helps 🙂
