If you are having problems colouring white modelling paste try using oil based colours (candy colours by Americolor) or powder colours (petal dusts) which will not change the working consistency of the chocolate. Water based colours tend to make the chocolate become grainy.

Alternatively, if you’d like to make your own modelling chocolate, ready coloured candy melts can be used. There are different brands available such as Wiltons, Merckens and PME. Callebaut also make flavoured and coloured chocolate buttons. There are lots of different recipes on line or take a look here:
