combining dummy and real layer in wedding cake

I want to add a dummy to each layer of a 3 tier wedding cake in order to increase the height. Do the dowells just go through the real cake? Do I use a thin cake board between the cake and the dummy or is the dummy adequate as a base? the layer are chocolate biscuit base, fruit middle and sponge top. I also war to ensure that there is no gap or ridge between the cake and dummy. Do I use royal icing to attach cake to dummy?I don’t want guests to get polystyrene to eat1

Hi gmit, if you watch lesson 3 of the round exploding parcel cake you will see how Paul increases the height with a dummy. Paul puts the dummy on top of the real cake in which case you would dowel the cake of the bottom and middle tiers before placing the cake card and dummy on top. Whichever way round you choose to do it, the polystyrene mustn’t touch the cake so you must always use a cake card to separate the dummy and the real layers. Paul uses ganache to stick the dummy and card to the cake and each other but royal icing would also work I think!
