convert lemon madeira to vanilla madeira flavour

Hi MIWL

On one of your many posts you had suggested the zingy lemon cake by Jane Hornby on the BBC Food website was a good reliable recipe http://www.bbcgoodfood.com/recipes/4576/wedding-cake-zingy-lemon. I tried out the recipe and it was a HUGE hit ….. thank you so much for the recommendation.

My question now is, how can i change it to a plain flavor? Do i just omit the lemon juice and zest? And replace with a small amount of vanilla essence?

Hi Sam

Yes just omit it but replace the juice with the same quantity of tepid water so the recipe balance remains the same. The zest can be replaced with what ever flavouring you like. I suggest vanilla extract and not essence. Her easy vanilla cake recipe might be what you’re looking for. I’m so glad you enjoyed Jane’s recipe, all her recipes are the most reliable I’ve ever used, I’m a huge fan!
Her easy vanilla and the chocolate wedding cake are also both to die for.
