Covering a sponge cake

Hi Denise

You can use royal icing on madeira cake as it is firm enough. The cake will need to be covered in marzipan first and left to dry for a couple or three days before the icing can go on. If you want a softer royal icing for covering add 1 teaspoon of glycerine to 450g of icing sugar, don’t add more than that because the icing won’t dry. Royal icing with added glycerine can’t be used for piping, it will be too soft so you’ll need to make regular icing for piping borders and other decorations. Hope this helps.

Hi Denise

I don’t use royal icing much these days, I should have added in my last answer make a light covering first, let it set and then make your final cover. The initial light coating will give you a good flat base and smooth finish.
