Hi annabel

If you don’t have cupcake caddies try using apple boxes which have the shaped trays in them. Cover the boxes up with cling film to stop anything getting on the cakes. x

Hi Gill

If you have a matured fruit cake about three months, you should be fine carving it. An immature fruit cake is very difficult to carve because the fruit won’t have macerated so it will be dry and crumbly. Other than that there is no reason why fruit cakes can’t be carved, there is some skill required but not impossible. The choice is yours, I would practice with a small one to begin with and get some confidence with it. x
