cream cheese filling

Hi just wondering if anyone could help me please. I have been asked if i could use a cream cheese filling on a cake as they are not keen on butter cream. I havent got a clue how long cream cheese frosting would last once on the cake? im not sure how far in advance i could make it or how long they would have left to eat it, does anybody else know?

Hello Jony

There are all different thoughts on this. Some people say that because cream cheese frosting contains so much sugar it’s ok to leave unrefrigerated, others insist it must. If you’re able to keep the cake in the fridge it would be fine for several day, (I had my son’s birthday carrot cake in the fridge for a week and it was perfect). If it has to sit out on the counter in a warm room I’d say a few hours, I don’t like taking chances with this sort of dairy, although I’m happy to keep ganache out. Assuming you can keep the cake in a fridge, would you know how the recipients will store it? You didn’t mention which sort of celebration the cake is for and whether it is part of a tier. Hope some of this info helps.

Yes i have had a very mixed response on this as well. Its for a birthday and they want it decorated in fondant as normal but they would prefere something other then butter cream but not chocolate so thats why they had the idea of using cream cheese. I have not even made cream cheese before so am very new to it. Thanks for your help anyway.

Just had a thought, if you type in the search box ‘alternative to butter cream’, there’s a product there which might be of interest. It’s an alternative filling used by one of our members who says it’s very good.

Hello jony, it’s called alternative to buttercream & called Cremebrill wonderful stuff. I found it on ebay on one of my search’s one day, good luck

As a matter of interest, does this product crust if used as a crumb coat or is it just used as filling? And is it as sweet as butter cream? I’m looking for a less sweet crusting alternative.

Hi Miwl, I haven’t used it to crumb coat but it does say on the on-line shop that it can be used.
it isn’t too sweet & you can adjust it to your taste. it is so lovely it’s like a soft ice cream but with a bit for substance. we all love it in our house.

Thanks Bev. going to order some for double 81 birthday cake, they don’t like ganache and buttercream is too sweet!! talk about a headache. I’ll let you know how it goes down and thank you so much for providing the link.x
