cream types

w..hat kind of cream should be use for choc gnache. Paul said double cream. Is that the same as thickened cream here in Australia. what should the percentage of milk fat be?.

Double cream has fat content of 36 percent or more. Heavy cream in Australia I believe is cream which contains other ingredients like gelatine. For full information on all cream please take a look here
