Why he didn’t mix butter and sugar?

If you are referring to Paul’s moist chocolate cake, it is because the recipe calls for all the ingredients to be melted together and not creamed. This recipe does not require aerating and that is why Paul did not cream the sugar and butter together. This is a high ratio recipe which requires more sugar than flour and mixing it gently will give the best results. The science between the play of sugar in a recipe is quite complex so following the instructions is essential. I hope this helps, however, if you do need more information please post again.
