Welcome to the Cake Decorators Q&A
crumbly flowerpaste
Hello, please could someone help me!
I mixed up a batch of flowerpaste a couple of days ago to use today (the mix was 250g sugarpaste with 1 teaspoon Tylo powder) and kept in an airtight bag. But when I got it out just now, it is really crumbly… I’ve tried kneading and added some Trex but it seems to be ruined…
I understood that once you’ve mixed in the powder, it needs to prove overnight? Or maybe have I left it too long – does ‘homemade’ flowerpaste need to be used straightaway? (Usually I use ready made flowerpaste but had run out)
Thank you!!

Hi goldengoose25
Tylose powder, unlike gum tragacanth does not need activating and can be used straight away. Refrigerating gum paste is not necessary. Once made it should be wrapped tightly in cling film and placed in airtight container or a ziplock bag.
I’m not sure why your paste has become so crumbly. It may have crystallized from the moisture in the fridge in which case the trex won’t help. If you make some more I would suggest add the tylose a little at a time until you can just feel the sugarpaste thickening. If you need to add more, sprinkle small amounts and knead really well until you have the consistency you want.
Thank you MIWL – YET AGAIN!! I’ve made a new batch today and used straightaway and it has worked fine 🙂
