Crystal Cake – how to remove glass when cutting

Hi,
I saw the tutorial on the crystal palace cake.
My question is when I deliver the cake at the venue how does the kitchen take the glass off the tiers without talking the icing with it as it is held down by royal icing

Usually the catering staff at the venue remove the cake to the kitchen for cutting and distributing to the guests after the bride and groom perform their ceremonial cutting. No one will actually see the glass being removed so any icing which comes off will not be noticeable once the cake has been sliced up. The staff are probably accustomed to dismantling tiered wedding cakes, however it might be wise to let them know that they will be dealing with glass and a degree of caution should be exercised when removing the baubles.
