Cup Cake Storage Before Decorating

I’d really like to bake Mrs Jones 24 cup cakes today and decorate them tomorrow (massive time issues at the moment)!

If baking a cake in advance I’d pop it in the fridge well wrapped but what do I do with cupcakes…or is it a big no no to bake 24 hours before?

Any help would be really appreciated as I don’t want to ruin a batch…murdered the last 24 I made as cakes came away from cases 🙁

Hi JoeB

Make sure the cupcakes are completely cold and pop them in a card cake box. Don’t put them in any sort of tupperware type boxes because they are airtight and don’t allow the air to circulate, this makes the cases come away. A card box will keep the CCs ventilated. If you don’t have a box let them sit out on the counter underneath a cooling rack, drape the rack with a clean tea towel. This is the way I do it, thank goodness not very often!

Basic question really…but how long can you store the cupcakes like this for – I have to make 48 and decorate with buttercream and flowers so desperately want to make approx. 48 hours before they are needed just in case I have any issues and have another day in the bag to play with…

Hi Pernickety

Cupcakes do tend to stale quite quickly because the are small and exposed to the air if undecorated. How long they can be kept as above would depend on the recipe. A basis cupcake with victoria mix will dry out very quickly. However brushing the tops with a little simple syrup will keep them moist for a couple of days. Alternatively you could make and freeze your CC and pull them out when required. There is quite a lot of discussion o site on freezing CC. Have a peek here and click on threads most relevant for you:
