Hi Dianne

I store my fondant decorated cake in a cardboard cake box which protects it from dust and also allows the fondant to settle and dry. Try and avoid keeping the boxed cake in too warm a room near radiators or other heat sources. I don’t really know why your fondant cake is going damp in an air tight tin. Tins are usually the preferred method of storage, however, it may be that you are inadvertently storing it in a warm place, so with the lack of circulating air and warmth, the cake and fondant could be sweating.
