Decorating a frozen sponge.

A friend of mine has asked me a question, so I am asking you . Is it possible to decorate a chocolate sponge while it’s frozen & then let it defrost. I’ m not quite sure why she would want to do this. Sweets 2

I don’t think it’s a good idea to put fondant on a frozen cake because as it defrosts, the icing would begin to absorb moisture and possibly spoil the decorations. Your friend can ganache a frozen cake, keeping in mind that the chocolate will set faster so she’d have to work quite quickly. Personally I would allow the cake to defrost slightly before ganaching, by the time the final layer of ganache is on it may be fine to ice. Another option is to experiment with a small cake and see how decoration holds up. If the fondant starts to dew with moisture don’t touch it as it will leave marks, just let it dry out at room temperature. By experimenting she’ll know for definite whether or not to decorated a frozen cake. Some feed back would be great. x

I made a mistake a while back by decorating a frozen sponge cake and the sugarpaste looked okay to start with but as the cake defrosted, it sagged around the sides of the cake and looked terrible, so I won’t do that again! Lesson learned!
