this recipe work best for me everytime,,,, i got it on the net but i cant remember from where lol
160 degrees celcius fan force or 180 without fan forced (preheat)
1 1/2 cups self-raising flour
140g butter, softened
200g brown sugar
130g caster sugar
350g mashed ripe bananas ( 1.5 cups)
1/2 tsp vanilla essence
1/2 tsp bicarb soda
1/3 cup milk
2 large eggs
butter, sugar, banana, vanilla, eggs, in food processor
process for about 2 minutes, add milk n pulse to combine
sift the flour n bicarb together into a large bowl
add flour mixture to food processor and process until just combined
pour batter into prepared pan and bake for about 50-60 minutes, or until a skewer or knife inserted in the centre of the cake comes out clean
Hi, this is the recipe I use
6 oz self raising flour
6 oz brown sugar
4 oz butter (unsalted)
3 very ripe bananas
1/2 teaspoon bicarb
3 medium eggs
Melt the butter, then add to the sugar and whisk until smooth. Add the beaten eggs and bananas. It goes very sloppy at this point. Sieve the flour and bicarb then fold in to the mixture until it is all smooth and thoroughly mixed in. Pour into a lined 2lb loaf tin and bake at Gas Mark 4 for 1 hour.
I’ve also made this with wholemeal flour and adding some chocolate chips to the mixture and both have worked really well.
Hope this helps.
Donna
PS. my 2lb loaf tin usually does a 6″ square. Hope it helps.
