Double depth cake

Hello

I’m doing a tiered cake with sponge cakes that are deeper than the usual, but need to do a fruit cake to match the height . My recipe does about a 3-4″ fruit cake any ideas.

Also can anyone point me in the direction of any of Paul’s tutorials that shows how to get the deeper sponge cakes

For the fruit cake I would suggested baking half recipe layer which can be used to give the extra height. Fruit cakes can be stuck together with boiled jam however I would suggest putting a centre dowel through the two to keep the cakes stable. I stuck fruit cakes together at Christmas, wasn’t happy with a little movement and found the skewer just gave me that little peace of mind. Paul doesn’t have a recipe for deeper sponges, you’ll find
