Doweling a top cake

I’m making a 7in chocolate cake ganached and covered in fondant to go on top of a cupcake tower . The bride has had a topper made in modelling paste I won’t see it until I set up the cakes at the venue , so I don’t know how heavy it is should I dowell the cake as a just incase ?

Hi chrisfree

Is there no way the bride could show you a picture of the model or if she’s bought it online, a link where you can view it? If the topper is on it’s own card you’ll need to know the size of the card in order to be able to put the dowels in the right place. If the topper isn’t already secured to the card presumably you’ll have to do that at the venue too and it will need time to stick safely. Will the card need to be iced? As you say you don’t know how heavy it is, in which case I would be inclined to ask for some more information from the bride. Hope this makes sense. x
