Dr.Oetker Vege-Gel Sachets substitue for Chocolate Mirror Glaze.
I would really appreciate it if somebody could give me the new amended recipe and instructions on how to make Helen Vass – Crème de la Crème - Chocolate Mirror Glaze by replacing the "Silver Leaf Gelatine" with Dr.Oetker Vege-Gel Sachets.
Currently she uses the following:
240g UTH whipping cream
360g Caster sugar
14g Silver leaf gelatine
120g Cocoa powder
Vege gel is not a substitute for gelatine, it is an alternative. The preparation is different so the whole recipe would have be adapted. As mentioned previously, I have not made Helen’s mirror glaze and unable to give an answer at this time.
