Hi
When doing a drip cake do I cover in fondant? Or just do the drip on top of the ganache?

Hi Jackie

You can do it any way you like. The drips can be done on ganache, buttercream, fondant or naked cakes. The choice is your’s.
It’s best to have the cake well chilled for the drips to set quickly. Royal icing can also be used instead of chocolate if you prefer. For more ideas have a peek in google for drip cakes. Hope this helps. x
