edible diamonds

Has anyone used these edible diamonds? I have heard that they mist over if not put on at the last minute. Does this apply to the jelly ones as well? Or just the sugar ones. Please help. Thanks

Hi MaggieH

I ordered some but never go around to using them. General advice indicates that moisture affects them and they should be placed on cake as close to presentation as possible. There’s some information here how to retain their clarity: http://www.rainbowsugarcraft.co.uk/Edible+Diamonds/0_CAAA833_CAAA700/PRAD535.htm
I’m not sure whether the gelatine type react in the same way as the hard isomalt type diamonds. I should think both are affected by moisture. There’s a lot of online information worth reading, just google ‘how to use edible gelatine diamonds’. Members who have used these gems will be able to give you first hand advice. x

Hello MaggieH

I have used the edible gel (Culpitt) diamonds. I sprayed the finished cake, which was a bag, with clear glaze spray to give a patent look, which then turned the diamonds cloudy. Also found them quite difficult to stick to the fondant, maybe I used too much glue so they weren’t tacky enough…? Only used them once so hopefully other members will be able to give you more feedback.

I was disappointed though and have always used inedible gems since if I wanted a diamante look.
