Eggless Recipe

Hi, Does anyone have an eggless cake recipe? I have to make a 10, 12 and 14″ round eggless wedding cake and can only find recipe for 8″ round. Needs to be 4″ deep. Thank you.

Hi Caris55, you will find in the blog on this site a recipe for eggless cake + vanilla extract from Madeitwithlove, I haven’t made it myself, but it looks good a there are full instructions and discussion about it. It’s for an 8″ round, but you should be able to easily convert the size using the cakeometer here http://www.cakebaker.co.uk/baking-tin-size-conversion-calculator.html. If I were faced with your task, it’s probably the way I’d go!

The recipe for eggless cake posted in this blog http://www.cakeflix.com/blog/making-an-egg-free-cake makes a really lovely 8″ cake. I’ve been trying to scale it up as an upgrade for larger cakes but haven’t managed to get the texture right. The problem lies in the amount of leavening which the recipe uses. If you scale the recipe up, the leavening too would need to be increased and I’m afraid that would leave quite a taste of baking soda when eating. What I would suggest, since you are baking for wedding cake tiers is to use a ready made egg free cake mix. You can purchase egg free cake mix here http://www.onlyeggless.com/. The same link is also posted in the blog. I’ll carry on experimenting with egg free recipes and hopefully will be able to post a more palatable scaled up recipe. I feel you might be wasting ingredients if you go ahead and try scale the recipe as it stands. I hope this helps. x

I didn’t really like the made mix from only eggless it came out more like bread rather than a cake. Someone told me you should mix with soda water rather than plain water. Could try that…..

It’s the carbon dioxide bubbles in soda water or any fizzy drink which makes the mix rise better. I’m sorry you’ve had a negative experience with the mix but thank you for your feed back which will help other members.

Have you tried making cake from readymade eggless mix which you suggested above?

I haven’t used it personally, it was recommended to me as a reasonable mix if any one wanted to try it. I have also had recommendations for egg substitute Ener G egg replacer, however it says on the packet it works best for three egg recipes so I haven’t been able to try out on a scaled up recipe.. I have tried out some of the vegan recipes but so far most have failed because they don’t rise very much and have very tight crumb. I’ve also bought flax seeds, that will be the next one on my list to try and hopefully produce a cake with some substance.
