Eggs

Maybe a silly question but would you bake a cake with eggs that have a bb date as tomorrow for a cake that would be eaten Saturday?

Best before date isn’t the same as use by date so I expect they eggs would be fine for baking cakes. I would however think that because they are less fresh, the yolks may not whip up quite as much volume like if they were really fresh. This would effect how much your cakes rise. To check if your eggs are still fresh pop them in a bowl of water. If any float to the top they’re off, if they sink they’re fine. Go by smell as well when you break them. If they’re off you’ll soon know!
If you don’t want to use these eggs for baking cakes, the whites would be excellent for meringue. Older whites give bigger volume so you could whip up some macarons.
