I’ve never tried using extra thick cream for ganache so can’t give a definitive answer. All I can suggest is making a little trial amount to see if it works. So sorry I can’t help more. If you do try it, your feedback will help others who encounter a similar situation. x

Well I finally got round to my trial with the extra thick cream, and it seems to have worked perfectly, will leave it to firm up, and see what it’s like, but so far, so good. X
Could you say what quantities you used please Sharon. Did you change any of the quantites? Really appreciate your feed back. x
Hi, well as I didn’t want to waste chocolate. Just did a very small batch, using 1.1 dark callebaut to cream, just did 50g chocolate, 50 cream. If it goes wierd later in the day, will let you know 🙂
