Filling for cake

Hi

If I fill a cake with ganash do I need to make a dam out of the ganash? If so do I just make the ganash for the dam a bit thicker by adding extra chocolate? Or is a dam only used when using buttercream? Thanks very much.

Hi bellscakes

It isn’t necessary to make a chocolate dam, just throw the ganache in and spread it out. It doesn’t matter if it squishes because the excess can be used as part of the initial crumb coat. If you were using a different type of filling it would be advisable to make a ganache dam. A butter cream dam is made to help contain a looser filling which could spill out and affect the sugarpaste. x
