Fondant and creme cheese frosting
Hi can someone please advice me on the following … I’ve just recently started doing birthdays and have done one wrh creme cheese frosting and then covered it with fondant..(asda own brands fondant ) . I was told cream cheese needs to be kept in the fridge… I covered the cake with fondant and then I stored it in th fridge in a cake box .. Next day when I wanted to finish off the designs I realised the fondant was cracking and looked very dry … Please can someone advice what I should have done when making cakes in advance..

I would never put fondant in the fridge .It can become a sticky mess very quickly .Fondant covered cakes should be stored in a cardboard box like a standard cake box .Dont keep it in an air tight box either .As the frosting you used needs to be kept in the fridge I would not use it under sugarpaste .Try using butter icing so cake does not have to be refrigerated .
I’d agree with Woodysmum. You can get cream cheese flavouring for use in normal buttercream but I’ve never tried it so not sure if it’s anot acceptable substitute?
