Freezing Fondant

Hi, I was watching a well known american cake show when the baker on the show suggested that after icing your cake to leave it for 24 hours to dry then it is quite ok to freeze the cake with the sugar paste on it. I am very dubious as you can imagine but this man has been in the business for years so I am sure he knows what he is talking about. Can anyone shed any light on this?

In my experience the best thing to do is trial it out on a small cake. I read and see lots of different opinions on this topic so I think it is best to experiment and see what works for you.

Just a note to say that while I have never frozen a whole cake, I have frozen sugarpaste for years with no problems.

I’ve frozen cakes with and without fondant and taste tested so many that I can personally say it works. I haven’t experienced any sweating or colour running when the cake is defrosting either. I’ve done it with with small 6″ cakes that have been buttercreamed and then fondant iced and larger cakes with ganache and fondant and both never showed any signs that they had been frozen and tasted just like they were baked the day before. My method is when I finish icing a cake I leave it overnight and then wrap in well in cling film then in tin foil, stick a label on it and then wrap it again in cling film. Then when I want to defrost it I take it out and leave it in the wrapping until it is fully defrosted. The longest I’ve left a cake frozen is 1.5 months and I (or my family) couldn’t tell the difference between it and a freshly baked cake.

I freeze cakes ganached and fondanted all the time. Had to do it once for a postponed birthday and left it wrapped until defrosted. Figures attached and all. Never had a problem! Have also delivered to clients for them to freeze and have gotte great feedback from those. Xx
