Freezing fruit cake

Does anybody know if you can freeze a rich fruit cake, ie a wedding cake before it is decorated?

Hi Sandrafrearson

Fruit cake can be frozen probably for about a year or even longer. Just make sure it is completely defrosted before decorating. Wrap the cake up well in parchment paper and several layers of cling film, and store in either a box or in a plastic bag. When defrosting, it is better to leave wrapping on to keep the moisture in.

MIWL should you let the cake mature first and then freeze it or freeze it straight away?

You can freeze it immediately. Some people suggest freezing even if it only a short time as they find it helps to mature it quickly

Personally if I freeze a fruit cake I like to mature it for about six weeks so it can be fed with alcohol. Having said that it is very rare that I freeze because my FCs are fed every two weeks during the maturing period. That doesn’t mean that you can’t go ahead straight away, just be sure to wrap it well and you’ll have a lovely cake. I mature my cakes for months on end, the longer the better, the sugars in the fruit and alcohol act as preservatives and providing it is stored correctly, the maturing produces a beautiful moist cake packed with tangy fruit and booze flavours. Just don’t strike a match too close to it! (kidding of course) x

Hi again. You say you feed the FC every 2 weeks. Do you give it anything other than alcohol ie fruit juice? And how much do you give it ( I think I slightly over did my Christmas cake %)). Also this is for my daughters wedding cake so the wedding is in September, when should I stop feeding and then when should I marzipan and Ice the cakes?
