Freezing red velvet

I am going to make a two tier red velvet but as I’m really pushed for time (on holiday) can I freeze the layers and ice the day before. There seems to be different opinions on this on line. Thanks

Red velvet cake can be frozen. Wrap each layer twice in cling film and put them in an tight container and place in the freezer.

To defrost, take the cake out either on the day required or on the day before. Keep the cling film on to retain moisture. Defrost either on the work surface or in the fridge in single layers.

If icing on the same day, ensure layers are defrosted thoroughly, as partly defrosted cake can cause the icing to sweat and form dew beads.

The different opinions on freezing red velvet cake may be because some people regard this type of sponge as quite fragile.
