Fruit wedding Cake

Im making a 4 tier stacked wedding cake, how long after covering with sugarpaste should i stack the cakes, also what is the best ingredient to stick coverpaste to the fruit cake ?

Hi If you are using marzipan, then cover with marzipan and leave for a few days to dry, then brush with water (or alcohol!!!) before applying the sugarpaste. Re stacking – I f you are delivering, then personally I would do it at the venue if there is time, makes transport easier, but I know others may prefer to stack two tiers then final assembly at the venue.

I f you allow the marzipan to dry over night it gives a good base for the icing to go on. Brush the marzipan with vodka and cover with icing. Leave the icing to dry and settle for two or three days, it makes stacking a lot easier. I usually assemble tiers at the venue because it’s easier for transporting, however, Paul advises when ever possible to deliver stacked cakes. thank-you ladies, im not using marzipan as they want a Nut free cake, I was going to stack 2 tiers together and then do the last stack at the venue
