ganache and covering for xmas

hi I have a lot of orders for sponge cakes this year and less fruit ones but I was wondering how long in advance can I decorate the sponge that has been ganached is 1 week to soon x

It depends on what kind of sponge and filling you’re using. Most sponge cakes begin to stale after five of six days, although soaking with a little simple syrup prior to filling will keep cake moist for a couple more days. Madeira cake will be fine for two weeks and some mud cakes which contain high ratio of sugar for about ten days. You could add a little glycerine to the batter to extend shelf life again by a couple of days. Cakes using fresh fruit purees will have a shorter self life as they can be prone to molding.. Low sugar jam fillings can also be prone to molding. My worry is if you decorate them a week in advance, how long will it be before they are consumed and what type of storage will the customer keep them in.
