Ganache and cream

hi can I use double Elmlea cream 36% fat content instead of the fresh British cream in ganache ?

Yes it's fine. Elmlea still contains fats in the form of oils, it makes a lovely ganache. Use it the same as British double cream If you need help with quantities there is a chart and accompanying blog here:
