Ganache cracking

Hi. I’ve tried to make a naked cake (dummies) using dark Ganache. Wanted to test before i did it for real. Once it had hardened i painted on edible matalic paint. (matalic powder and vodka..thought that would be ok ). left it a couple of days had other things to do. When i went back to add the chocolate flowers. I noticed it had cracked in several places. What have i done wrong?

I’m used to using Ganache as i make hand made Belgium Chocolates . I used the same recipe but without the butter…For every 200 grams of Dark Chocolate ( i’m using 54.4% ..Callebaut) and 175 grams of Double cream.

Hi Bernadette

This is a first one on me! I have had ganache crack but that was only because I had used 100% cocoa with the incorrect ratio of cream. This problem may have been caused by the styrofoam absorbing too much moisture out of the ganache and probably nothing to do with the vodka painting …. could be wrong though as vodka can be quite drying. You might find painting with cocoa butter more compatible with ganache. These are just my thoughts. There’s nothing wrong with your ganache to cream ratio, although in the tutorials for dark chocolate 2: 1 is used. 🙂

Thankyou.. Never thought of the dummie absorbing the moisture….think il try on a small cake and see how that works…
