Ganache in the cake

Please can anyone help? If I reduce the amount of chocolate in ganache mixture will it affect it , because my customer doesn’t want it too sweet ? Thanks in advance.


Hi Bukunola

If you reduce the chocolate to cream ratio the ganache will not set. Dark chocolate which has 60% coco mass is not sweet, you could let the customer taste a piece of the chocolate. The higher the coco content the less sweet it is. I would not use anything above 70% because it will be very bitter, unless of course that is what your customer would like.
