Hi Barbara

1 pint of cream is 454 mls and 2lbs of chocolate is 900g which will make 1354 g and is way more than you need.
To make 800g of ganache you need 12 fl oz of cream and 1lb 3oz of chocolate.

Hi Thank you for your quick reply. May i just ask, i thought dark chocolate ganache was a ratio of 2:1 wouldn’t that mean for 12 oz of cream i would need 24 ozs of dark chocolate (1lb 8oz)….confused!

Yes …… yes you are right! I’m getting confused with all these ounces and pounds. I haven’t used Imperial measures for such a very long time. So much easier in metric. 🙂

Hi again…Paul uses dark chocolate the attach the small cake board to the lens dummy and for attaching the lens to the cake. Is it just chocolate or ganache and won’t it melt at room temperature.

Paul works mainly with ganache so it will be that which he has used. Dark ganahce made with 2:1 ratio is pretty stable at room temperature and won’t melt. Of course if the temperature is hot, hot, hot!!!! it will melt just like any other chocolate 🙂 Have a go at metric, it’s so much easier than Imperial 🙂 x
