ganache should you mix it?

hi
im not sure if you just mix the chocolate into the boiling cream and leave to cool then apply to the cake or mix in a mixer to fluff it up a bit then put it on to the cake?
any advice would be great as i messed up my white choc ganache the other day and think it may be because i mixed it :-/

Chop the chocolate up, or use the grater of your food processor, heat the cream and pour it over the chocolate, wait a few minutes for the choc to melt slightly then start mixing with a spatula or spoon until the choco has completed melted and combined with the cream. Leave it to cool on the counter but don’t cover it as it may cause condensation. Paul uses a palette knife to mix ganache to bring to a spreading consistency. If it sets too hard pop it in the micro wave for 30 seconds at a time on low heat, don’t over heat or it will burn. Ganache can be whipped for filling and covering cakes. Whipping adds volume but it does reduce the shelf life and should really be treated as cream.

I don’t whip ganache as I find aerating it produces a less firm consistency for a covering for fondant. White ganache does not set as well as dark and whipping it will make it very mousse like. Other people have their own way, I have just said what I do. Hope this helps.

thank-you madeitwithlove thats helped alot, my friend swears you mix it but i think i may have over mixed when i did it because it went grainy and didnt taste right, probably turned it in to butter knowing me! lol

did it taste like butter? Grainy and oily ganache can be saved, I know you say yours went grainy so I presume it went very thick. Have a search of this question ‘oily ganache’, although yours wasn’t oily it may still be helpful. The link given in one of the answers no longer works from this site but you can certainly google the name of that site for more information. x

Hi , it went fine at first but once I went back to it after mixing it look like it had separated and was kind if like a cottage cheese :-/ it tasted ok but I just couldn’t figure out how to save it at the time. I don’t think I out enough chocolate in it as I was going by my friends recipe and it was 1 part cream to 1.5 chocolate. Next time I will go by Paul’s and it should be fine. x
