Ganached cakes – how long do you have to leave them before covering

Hello everyone

I keep getting different advice about ganached cakes. Some say you have to leave them overnight to set before covering some say put them in the fridge for a couple of hours, some say leave them at room temperature for a couple of hours before covering. My question is – is it OK to cover them with ganache and then cover them with sugar paste the same day/night (i do my cakes on a night as I work full time)

I pop mine in the fridge until it sets which doesn’t take a long time, a couple of hours or less is good to go. You just need to make sure that the surface is hard, not too sticky.

Thats great thanks, can I ask though sometimes when I take it out of the fridge the ganache gets some condensation on it is that OK as I thought chocolate and water didn’t mix

No, don’t worry about the condensation on top of the cake it will disperse once out at room temperature for a short while.
