do you know how I can change Pauls chocolate cake and Mrs Jones sponge cake recipe to a gluten free one?

Any recipe can be made gluten free with a little tweeking to get the balance of ingredients right. If you look here
http://www.coeliacshack.com.au/index.php?show_recipie=93 the recipe shown is very much like Paul’s. If you make the recipe substitutes for gluten free flour and keep to the 8 eggs in the recipe I think it would work. Paul uses 6 eggs however gluten free cakes are drier in texture so the addition 2 eggs would compensate. Have a look and see what you think. I haven’t baked this so I’m not saying that it will definitely work.
